This year I have tried to introduce substitutes for the many allergies that are facing my students. Therefore, I did a gluten free granola and used Sun butter and Soy butter for the students to try as a replacement for peanut butter. Tell me what you thought..
Scottish Eggs I made Scottish eggs this morning for a teacher breakfast and they were high in protein and a great way to start the day. You start with making hard boiled eggs. I do this by putting eggs in cold water and bring them to a boil . Once they are boiling, I take them off the stove, cover them and let sit for 10 minutes. I take one out and spin it to make sure it is done. (If the egg is done it will spin very fast).
I then take 1 lb of sausage for 4 eggs cut it into portions and flatten it out and wrap it around the egg. I added 2 tsps of worchester sauce and 1 tbsp of flour with a little bit of fresh pepper. Dip this sausage egg roll in one freshly scrambled up egg and then into 2/3 cup of breadcrumbs (panko or italian) set on your broiler pan in your oven for 25 minutes to 35 minutes (should be brown and crusty) at a temperature of 400. Enjoy! I am not sure I have the answer to this but I have observed that kids if they can articulate why they do not like a food, it is more likely that you can change its appearance or put it into something else like a smoothie for them to eat. Almost 100% of students will eat spinach if you put it in a shake. Remember just a little bit changes the color to green. I am not talking about a milkshake but a veggie shake with fruit.
