Cranberry Salsa Recipe
This recipe from from my Aunt Debbie. This goes great with Pumpkin Tortilla Chips or Scoops.
12 ounces of fresh cranberries
1 large granny smith apple - peeled, cored and cut into chunks (sometimes I leave a little of the skin for color)
1/2 large sweet red pepper - seeded and cut into chunks
1/2 medium red onion
3/4 cup sugar
1/3 cup apple juice
3 tbsp cilantro chopped (I also use the squeeze tube variety)
1 tsp lime zest
2 tbsp pickled jalapenos chopped (I usually leave these out when I serve the students)
1. In food processor chop/blend cranberries, apple, pepper and onion so that they are chunky, (like salsa) I have a small food processor so I do this in a couple of steps)
2. In separate bowl, stir together sugar, apple juice, lime zest, cilantro and jalapeno
3. Add cranberry mixture and mix well to blend.
