Mrs. Sheets Granola with Toasted Coconut
Ingredients:
2 large eggs,2 large egg whites,2 cups of light brown sugar,2 tbsp canola oil,2 tsp ground cinnamon,1/2 tsp of salt, 2 tsp of vanilla extract,
3 cups of toasted oats, 1 1/2 cups of toasted coconut, 2 handfuls of craisins and 2 handfuls of raw pumpkin seeds or chocolate chips (minis)
Directions:
Preheat oven to 325 degrees. Spread foil out on cooking sheet and spread out coconut. Watch it carefully should take 10-15 minutes might be faster to toast up around the edges.
Line 8x11 pan with foil or 8x8 to make thicker granola. Coat with cooking spray.
Whisk egg, egg whites, sugar,oil,cinnamon, salt and vanilla in a large bowl. Stir in oats, craisins (nuts if you like) and pumpkin seeds or chocolate chips. Spread in prepared pan.
Bake until golden brown , 30 to 35 minutes might be longer with 8x8 pan. Cool, cut into bars with a lightly oiled knife.
